MUSHROOM PENNE PASTA Ingredients: 1 (8 ounce) package penne pasta Handful of dried mushrooms, soaked and chopped 2 tablespoon olive oil 1/4 cup grated Parmesan cheese Pinch of chilli flakes, salt and pepper to taste Fresh basil leaves METHOD: 1. Bring a large pot of water to a rolling boil over high heat. Add a generous pinch of salt, and cook pasta in boiling water until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain. 2.
